Kramer Limited Edition III Damascus Zwilling 8" Chef Knife

Description: Originally purchased from a shop in Japan. Never used, never sharpened. This is number 23 of 99 knives produced for Limited Edition III. Like the Limited Edition 2 knives, this one has a Karelian Birch handle. Damascus blade with integral forged bolster. Each of these knives combines the beauty of Bob Kramer's design with traditional German blacksmithing. The blade is made of the purest, hand-forged Damascus steel. The combination of two different types of steel with different carbon contents offers a hardness of approximately 61 HRC (Rockwell), is exceptionally sharp and forms the basis of the Limited Edition III from KRAMER by ZWILLING. Fire welding creates a steel block with 160 layers, which is forged by hand and hammered to the required thickness. Each blank receives its own structure of the 160 layers. It is made visible in one of the last steps in knife production: the so-called "drawing out" of the Damascus steel in an acid bath, to which the different types of steel react differently. This created the distinctive grain, which looks different on each blade. The exclusive SIGMAFORGE blade is precision forged from a single piece of Damascus steel. Each birchwood handle is finished by hand to guarantee excellent handling and the best comfort. Note that the right handle does have a small gap to the spine, visible in the pictures. Kramer Zwilling Carbon knife is shown for comparison and is not included (original version with African Blackwood handle). Shipping cost includes insurance for the full purchase price.
